About 30 minutes before grillin', remove the meat from the refrigerator and let sit, covered, at room temperature. Heat your grill to high then control cooking temperature depending on the meat cuts. Place the meat on the grill and cook until golden brown and slightly charred. If you wish to sear, you may do so under supervision by constantly flipping few times on direct heat. Allow the meat to rest for 2-3 minutes before serving.
