The cleaned Meat can be dusted with our Rib n' Chops Dry rub then refrigerated in a food grade container for 3 to 4 hours. About 30 minutes before grillin', remove the meat from the refrigerator and let sit covered, at room temperature. Lean Meat such as Lamb, Mutton or Goat is braised quickly over the fire until slightly charred while turning them over every 4-5 minutes. Whole Goat or Lamb is slow roasted over a fire until cooked and crisp on the outside. Allow the meat to rest for 2-3 minutes before serving.
